The Vintage:

2020 was a remarkable year for weather and wine in Ontario, with all winegrowing regions being treated with excellent weather conditions. Once spring arrived for good, the growing season went underway with lots of sunshine and low humidity with more rain towards the end of May. During June – July, temperatures were above average with low amounts of precipitation. August displayed similar high temperatures but also brought in a fair share of heavy, but isolated showers. Sunny and dry conditions continued throughout September – October providing ideal weather for the full and complete maturation of grapes. Overall, the quantity of grapes was down slightly, but the quality of the fruit made up for it!

Vinification:

100% Pinot Noir grapes that were hand-harvested at 21.3 Brix⁰ on September 25, 2020 and gently crushed. 22% of the clusters were kept separate and added back to the fermentation vessel to help add additional flavors and depth to the wine. During fermentation, the skins were punched down twice daily, macerated in small batches for 19 days and transferred to French oak barrels for 30 months of aging. The result is an elegant wine with refined structure and minerality with excellent aging potential.

Impressions:

Paradox exhibits fruity flavors of cherry, raspberry, strawberry as well as earthy and floral notes of mushroom, truffle, and violet. Oak aging is used in the production of Paradox which imparts flavors of vanilla and spice. Paradox may also exhibit notes of cola, tea leaves and a hint of minerality. Our premium site contains an abundance of mineral & limestone deposits resulting in wines that express the unique terroir of our vineyard.
