SR 2021 Sauvignon Blanc
The Vintage:
2021 saw unpredictable weather that challenged even the most experienced winemakers and grape growers. Record-setting temperatures, intermittent drought, high rainfall, and humidity – Ontario saw it all this year – and this led wineries to pay extra attention to vineyard management to ensure a good outcome. Overall the vintage produced excellent aromatic whites wines and complex reds with good balance.
Tasting Notes:
Classic Sauvignon Blanc characteristics of lemon zest, fresh grass, and bright herbal notes on the nose. The wine is distinctly crisp and refreshing on the palate with bright zippy flavours of green apple, grapefruit, and lemongrass. A light-bodied, crisp, and refreshing white wine with abundant citrus fruit and a crisp, racy finish. A perfect accompaniment to lighter fare and warm summer months.
Technical Notes:
100% Sauvignon Blanc harvested from a single vineyard in the Four Mile Creek sub-appellation in Niagara. Grapes were harvested early in October and an average of 18.5° brix, low sugar balanced with good fruit and acidity levels. The grapes were immediately pressed at the winery and fermented in stainless steel tank using selected yeasts at cool temperatures. After fining and filtering the wine was bottled under a screwcap in March 2022. 200 cases produced.
