Unscripted 2020 Cabernet Merlot

THE VINTAGE:

2020 proved close to perfect conditions for wine grapes with a warm, arid

growing season and temperate fall harvest. Virtually all grape varieties

performed well in this growing season and the dry and temperate harvest

season meant most grapes were picked in pristine condition with excellent

concentration. This quality should be evident in both red and white varieties

grown in the Niagara region.

TASTING NOTES:

Robust yet elegant nose brimming with black cherry, dark chocolate, plum and

hints of baking spice and toasty oak. The palate is complex and finely balanced,

with a rich mid palate, softened tannin and delicate acidity all working together

to make a well-structured red. Flavours of juicy blackberry, blueberry and

vanilla are at the fore, with notes of cedar and lavender in the background.

TECHNICAL NOTES:

A blend of 40% Cabernet Sauvignon, 35% Merlot and 25% Cabernet Franc.

Grapes were harvested from the select vineyards in the Niagara Peninsula.

Fermented in individual batches on the skins over a period of 12 days, the wines

were then put into French oak barrels with full malolactic fermentation and

further aging for 18 months.
