Unscripted 2021 Sauvignon Blanc

THE VINTAGE:

2021 Vintage saw unpredictable weather challenge even the most experienced winemakers and grape growers, defined by extreme variable climate from start to finish. It was a stop and start story in most regions, with bursts of precipitation slowing the harvest and introducing pressures on the vineyards to be managed. Fortunately intermitted warm, sunny days in later summer early fall help bolster the ripeness of most varieties.

TASTING NOTES:

Surprisingly dry yet bursting with aromas of juicy sun-warmed peaches and hints of citrus and tropical fruits, it’s a testament to the belief that simplicity can be extraordinary. The finish is clean, bright, and remarkably persistent. It leaves a lasting impression with its lingering fruity essence, providing a memorable and satisfying conclusion to each sip. The limited residual sugar highlights the wine's dry nature, making it an excellent choice for those who appreciate a more restrained style and less sugar intake in their diets.

TECHNICAL NOTES:

100% Sauvignon Blanc harvested from a selected two rows of twenty year-old vines on the Pohorly home vineyard on the Niagara River Parkway sub appellation in the Niagara Peninsula. Fruit was gently pressed and fermented slowly as low temperatures in stainless steel tanks. After aging and racking the wine was bottled under screwcap closure. Only 150 cases were produced.
